Pat the beef cubes dry and season on all sides with the salt and pepper. Heat the coconut oil in a skillet over medium heat. Add the beef and brown on all sides. Transfer the meat to a 6-quart slow cooker, leaving the drippings in the pan. Add the mushrooms, onions, and garlic to the skillet and sauté for 3 minutes, or until the onions are tender. Add the onion mixture to the slow cooker. Proceed to Step 3, pouring the cream cheese mixture into the slow cooker. Cover and cook on low for 6 hours or until the beef is fork-tender. Proceed to Step 5, then stir to coat the cabbage “noodles.” Cover and cook on high for 30 minutes to 1 hour, until the cabbage is very tender. Proceed to Step 7.
